Who doesn't enjoy a sweet pancake, especially on a chilly morning?
Almond Flour Pancakes have become a favorite of mine! The good news is they are gluten-free too! I have found almond flour is so easy to digest; constipation is no longer an issue. (Did I just say that?) Well, it's true. These pancakes leave me feeling satisfied. White and wheat flours are just too heavy for my stomach and stay too long!
Tips: My recipe calls for homemade yogurt, but making it is time consuming. I have been buying a 6 ounce container of Fage yogurt from the grocery store. This batch makes 9-10 pancakes, so I put them in the refrigerator and take out only as many needed at a time. Better yet, make a double batch! Pop a couple in the toaster oven and your ready to go!
I heat my electric skillet to 300 degrees and lightly butter it. I found the pancakes sometimes stick if I don't.
Add a couple pats of butter and drizzle with sweet honey!
- 1 and 1/2 cups of almond flour
- 3 eggs
- 1/2 cup of homemade yogurt or a 6 ounce container of Fage yogurt
- 1 tablespoon of honey
- 1 teaspoon of vanilla
- 1/4 teaspoon of sea salt
- 1/4 teaspoon of baking soda
Whisk all ingredients together. Cook over medium-300 degrees.
Variation: Add a few blueberries per pancake while cooking.
